Winter is practically upon us which means that the days are shorter, darker, and for most of us – lazier. We get home from our 9-5’s and the last thing we want to do is cook a meal for our families. We’d much rather kick up our feet, pour a glass of wine, and watch reruns of Sex and the City while our S.O. rubs our feet (hint – hint, partners). Fortunately, with a little planning ahead, these dreams can become a reality. I’ve created this delicious cheeseburger casserole that is great for any season, any family gathering, and the perfect gift for your friends who are welcoming their new baby. Don’t forget to make multiples to have on hand for those last-minute meals!
Note: This recipe makes two cheeseburger casseroles.
TIME: 30 mins – prep; 30-45 mins – bake
YIELDS: 12-16 servings
- 2 Toss away foil baking pans
- Knife and cutting board (optional)
- Large grater
- Plastic wrap
- Tin foil
- 3 lb beef or turkey
- 5-6 cups frozen tater tots
- Spray non-stick cooking oil
- 1 large yellow onion
- 1.5 cups frozen corn/canned corn, drained
- 14 oz can of Rotel Diced Tomatoes and Green Chilies or diced tomatoes
- 6 cups shredded cheddar/colby jack cheese
- Pickle relish, sour cream, ketchup, ranch dressing, potato chips (optional)
- 4 Tablespoons yellow mustard
- 4 Tablespoons worcestershire sauce
- 2 Tablespoons minced garlic
Cook your beef/turkey in a skillet over medium heat until brown, drain
Spray non-stick cooking oil to bottom of both pans
Evenly cover the bottom of both pans with frozen tater tots, corn, and diced tomatoes
Use your large grater to grate your onion. This will allow a more even distribution of onions throughout the dish rather than chunks of onion randomly scattered. Cook in skillet if desired.
Layer your beef/turkey in the pan with your onions on top. Note that the onions on top will keep the meat moist through the baking process.
In a skillet, combine yellow mustard, worcestershire sauce, and minced garlic – whisk until combined and of liquid consistency. Pour over top of both pans.
Top the casserole with grated cheese.
To Bake: Cover with tin foil and pop in a 375 – 400° oven for 30-45 minutes or until potatoes are cooked and cheese is golden brown. During the last 10 minutes of baking, uncover.
To Freeze: Lay a layer of plastic wrap directly on top of the casserole with no air gaps, cover with tin foil. Label the casserole with instructions and freeze!
To Serve: Top with pickle relish, ketchup, ranch dressing, and/or sour cream to make your cheeseburger casserole come to life! For an added flair, top with crumbled potato chips.
In just 30 minutes we made two casseroles! Now the only thing left to do is pull one out of the freezer on a lazy Thursday night and drink your wine while you watch a Sex and the City rerun. In just 30 minutes you’ll have a great meal and your Carrie Bradshaw fix, too!
